「鳴日廚房」的創造源自於完整的臺灣鐵路之旅體驗。「鳴日號」已經有了讓人驚豔的舒適的座椅與吧檯,我們也希望能將台灣在地的美食帶上火車,使沿途的特色佳餚都成為這趟旅程的一部分,讓人彷彿沿著列車移動,短暫地駐留在每個城市。
“The Moving Kitchen” is the brand new railway restaurant that brings refined dining on the train. This unique moment will bring a new understanding of the culinary experience and railway travel into one.
「鳴日廚房」乍看是高級餐廳的風格,然透過藤編、木頭、石頭等運用捕捉了台灣在地色彩,喚醒台灣最樸質的美麗。柏成設計創辦人邱柏文分享說「我們就是要打造一台在國外找不到的餐聽列車。」透過火車啟程鳴笛,讓更多人能一同迎向革新的臺鐵美學設計,感受台灣之美。
“We want to create the unique railway dining that you can only experience in Taiwan,” said the JC Architecture founder Johnny Chiu. For the first time, we were able to revive the conventional railway with innovative design policies on a national level.
「鳴日廚房」包含一個備餐廚房、一節 26 人與一節 28 人餐廳車廂,其中包括經典的兩人桌、四人桌、吧檯桌和包廂圓桌。其 LOGO「R」 不僅是 Restaurant, Railway, 更象徵 Reimagination 打造顛覆過有想像的觀光列車。
We want to reimagine everyone’s impression of a train. The logo of “The Moving Kitchen,” R, stands for “Restaurant, Railway, Reimagination.” It is a 54 person seating restaurant that travels around Taiwan island, including a full-size kitchen, bars, lounges, two-seater, and four-seater dining arrangements.
怎麼樣讓比較鋼鐵般的火車,可以帶一些比較柔軟的材質進去。於是柏成設計創辦人邱柏文回想到小時候,坐在阿嬤的藤編椅子上,那種帶有點刺刺,帶有香香的感覺,那是屬於台灣人共同的記憶。
From an 85km/hr steel box to a warm and comfortable dining experience? Johnny Chiu, the founder of JC Architecture, recalled his childhood. “I love going back to my grandmother’s house, being spoiled by her with my favorite dishes, while sitting down on a slightly stinging rattan chair that is cool in the summer, and warm in the winter.” I want to bring everyone to the childhood moment.
將一座餐廳搬上火車需要克服無數挑戰,為將廚房搬上火車,需增加三倍的電力。且一般餐廳的座椅可依顧客需求移動,然法規上火車座椅必須固定,因此一切都需要重新設計並結構上採用創新的固定方式,使家具輕巧和舒適。
Moving a restaurant onto an old train has its challenges, such as boosting three times the power to fit cooking requirements, or redesigning the fixed chairs so getting in and out is comfortable. Besides, we redesigned the lighting system, highlighting the food, as well as complementing the scenery outside.
步入「鳴日廚房」宛如進入一場尊榮的享受。柏成設計依據列車行駛沿線,設計了不對稱的天花設計,在面山側,延展自然元素,在面海測,放大窗框的邊界,讓窗外景色完整地帶入車廂中,創造山與大海的連結,使乘客在沉穩靜謐的氛圍下,細品饗宴與風景。
We noticed that the train always travels the island with mountains on the right side and the ocean on the left side. To reflect on the beauty of both views, we created an asymmetrical ceiling design, to open the window bigger with black frames on the ocean side, while using the natural wood element to compliment the Taiwan mountains.
柏成設計重新設計列車燈光,使用暖色調的燈烘托用餐氛圍,並在牆上設計了一款燈具,以呼應台鐵金屬工藝美學,且其特殊材質可以任意揉塑,使每盞燈都成一件藝術品。
We took care to redesign the lighting system, highlighting the food, as well as complementing the scenery outside throughout the journey. A playable metallic sculptural light is also inserted onto the train to create a floral sensation with the dining experience.
為提升輕奢的質感,我們以上下兩隻細管支撐酒櫃,凸顯精選餐酒。調酒吧檯下方抽屜設計側開方式,讓工作人員不打擾用餐乘客,也能方便取用。並在桌子下方設計置物鉤環,在桌邊設計溝槽放置菜,照顧每個用餐細節。
We designed two wine cabinets that float above the train at eye level to increase the desire for consumption. We designed a cocktail station that is easy to use on a moving vehicle. We design a menu and phone stand for the comfort of a moving train, and a handbag hook for a considerable journey.
我們很興奮台鐵能選擇台灣的設計師,讓柏成設計能有機會改造 3 輛 70 多年的火車廂,保留原有車體骨架然重新設計外觀與內裝,打造專屬臺灣的餐廳列車「鳴日廚房」。
Instead of buying a new train from foreign train design companies, the Taiwan Railway Administration took the courage of using 70-year-old railcars, letting us refurbish the old heritage with new programmatic possibilities.
鳴日廚房有種放慢時間的能力,讓你慢慢體會、品味廚師的藝術以及台灣的風景。因為唯有慢,你才能細細的品味,才能在這趟旅程裡留下更深刻的記憶。
“The Moving Kitchen” is about experiencing ‘slowness’, from the warmness of the lights to the scenery as we go across mountains and sea, to the actual slowing down at particular scenic points, it allows one to savor the art that is made by the chef. You will have an immersive and unforgettable impression. We hope everyone can live that life-enriching experience.
