「鳴日廚房」的創造源自於完整的臺灣鐵路之旅體驗。「鳴日號」已經有了讓人驚豔的舒適的座椅與吧檯，我們也希望能將台灣在地的美食帶上火車，使沿途的特色佳餚都成為這趟旅程的一部分，讓人彷彿沿著列車移動，短暫地駐留在每個城市。
